Huevos Rancheros

I think the majority of the population is familiar with this one. My family regularly had these, especially on the weekends growing up. Still an all time fav. These are especially good after a night out partying for the younger folks. My family's version of this dish is pretty quick to put together.


What you need:


*Tortillas

*Eggs, quantity of your choosing

*Refried beans, a small can should be enough, unless feeding a crowd, get the big can or refry your own

*2 small cans (or 1 large one) of El Pato tomato sauce, a shortcut and delicious!

*One chili pepper, we use Serrano or Jalapeño

*1/4 small onion, white or yellow

*small bunch of cilantro, about 1/2 cup

-Oil, vegetable, corn, or canola to fry and make tostadas, about 1/2-1 cup


What to do:


-In a medium pan, heat up oil, when hot, fry up each tortilla, season with salt when you take it out of the oil. My family loves these so we usually make 2 per person.


-Heat up the beans or refry your own


-Chop the chili pepper, onion, & cilantro. If you don't like the extra spice you can omit the pepper or if you like it really fiery, add more.


-In a small sauce pan heat up about 2 teaspoons of oil and sauté the veggies. Once the onions are translucent and soft pour in El Pato sauce and let simmer on low about 5 minutes. Turn off and set aside.


-In a small pan Fry up each egg needed for the amount of tostadas you are making, keep them warm on a plate near by. We somehow always just assemble each as it is coming out of the pan


-Assemble. Take a tostada, smear some beans, top with egg, pour salsa over top and enjoy!
