These are supper easy to make, I know a lot of people say that about their recipes but it's true.
I tossed a couple things I found in the fridge for this one. This time I had Mahi Mahi, lemon slices, a little bit of sliced onions and a couple pats of butter.
What you need:
*Fish fillet of your choice as well as quantity of your choosing
*Veggies, I like to use lemon, onions, whatever peppers I've got on hand
*Butter, as much as you like
*Spices of your choice, I used, Salt & pepper, old bay, garlic powder, onion powder, paprika, Italian seasoning (a dash of each spice on each side of the fillet)
-Preheat oven to 325°F
-Slice a couple lemons and some onion and make a layer each to provide a place for the fish to cook on
-I placed 2 little pats of butter on top of these
-Season your fish, both sides. Just a sprinkle of each spice, not too much
-Place some more butter on top, I did another two little pats. Yes it's a lot, but so tasty
-Pull up the ends of the foil and make a sort of tent and roll together towards the fish. Not to snug or the steam might rupture the packet while it cooks
-Roll up the other two ends, again towards the fish, and place on a baking pan. Repeat as many times for each fillet.
-Place on middle rack and back about 20-25 minutes. You want your fish firm and your veggies tender but not mushy.
I served mine with steamed white rice
Enjoy!
